Apple Stuffed Turkey Tenderloins
- 2 (8 oz.) turkey breast tenderloins
- 1 apple, pared, cored and diced
- 1/3 c. orange juice
- 3 Tbsp. jellied cranberry sauce
- 4 tsp. orange marmalade
- 2 egg whites, beaten
- 1 1/2 Tbsp. water
- 2/3 c. corn flake crumbs or seasoned bread crumbs
- Combine apple, orange juice, cranberry sauce and marmalade in small saucepan.
- Cook until apple is soft but holds its shape. Wipe tenderloins with damp paper towel.
- Slice them lengthwise to form pocket.
- Spoon half of apple mixture into each pocket.
- Secure edges with toothpick.
- Cut each tenderloin in half.
- Egg should be beaten with water.
- Dip tenderloins in egg mixture.
- Dredge in crumbs.
- Put in casserole dish not touching.
- Bake in preheated oven at 350u0b0 for 15 to 20 minutes.
- Serve remaining sauce over turkey.
- Serves 4. Also good with chicken breasts.
