Veal Parmesan
- 6 veal cutlets
- 1/2 c. milk
- 2 eggs, beaten
- salt and black pepper
- 1/2 c. olive oil
- 1 c. bread crumbs
- 1 c. flour
- 1/2 c. Parmesan cheese
- 2 c. spaghetti sauce
- Mozzarella cheese
- oregano
- Pound cutlets; set aside.
- Combine eggs, milk, salt and pepper; set aside.
- Combine bread crumbs, flour and grated cheese; set aside.
- Heat in a skillet 1/2 cup olive oil.
- Dip cutlets into egg mixture, then into crumb mixture.
- Add cutlets to skillet and slowly brown on both sides.
- Arrange cutlets in a baking dish. Pour spaghetti sauce over cutlets, then top with Mozzarella cheese and sprinkle with oregano.
- Bake in a 350u0b0 oven for 30 minutes, or until lightly browned.
- Serves 6. Serve over spaghetti.
