Honey Yeast Rolls
- 1 pkg. active dry yeast
- 1 c. milk
- 1/4 c. butter
- 1/3 c. honey
- 1 tsp. salt
- 2 eggs, well beaten
- 2 1/2 c. whole wheat flour
- 2 1/2 c. unbleached white flour
- Dissolve honey in 1/4 cup warm water.
- Scald milk and add butter, honey and salt, let butter melt.
- Cool milk mixture to lukewarm.
- Add eggs and yeast, then flours.
- Mix well.
- Knead until satin smooth.
- Place in buttered bowl; cover and let rise two hours, or until doubled in bulk. Punch down and form into round balls about the size of a golf ball.
- Place separately on buttered cookie sheet or close together in buttered round pan. Cover and let rise again about 30 minutes.
- Bake in preheated 350u0b0 oven 15 to 20 minutes or until browned.
- Makes about 2 dozen. These freeze well.
