Holiday Orange-Blueberry Bread
- 3 c. flour
- 1/2 tsp. baking soda
- 1/2 c. butter, melted
- 1 Tbsp. grated orange rind
- 3/4 c. sugar
- 1/4 tsp. salt
- 2/3 c. orange juice
- 1/2 c. chopped pecans
- 1 Tbsp. baking powder
- 3 eggs
- 1/2 c. milk
- 1 c. blueberries
- Sift dry ingredients together.
- Beat eggs.
- Add butter, orange juice, milk and orange rind.
- Mix well.
- Pour liquid mixture into dry ingredients and stir only until well moistened.
- Carefully fold in nuts and blueberries.
- Pour into 5 x 9-inch buttered and floured loaf pan.
- Bake at 350u0b0 approximately 60 minutes or until toothpick stuck in center comes out clean.
- Let set 10 minutes before removing from pan.
- Cool on rack.
- Wrap and refrigerate overnight before slicing.
