Ranch Chicken Chili
- sweet and spicy Thai sweet chili sauce
- 1 lb chicken breast
- 1 medium onion (finely diced)
- 1/2 cup cilantro (minced)
- 1 cup frozen corn
- 15 ounces black beans (drained and rinsed)
- 15 ounces white beans (drained and rinsed)
- 10 ounces rotel style tomatoes
- 1 1/2 ounces ranch dressing and dip mix (Wildtree brand Creamy Ranch Dressing mix)
- 1 cup chicken broth
- 8 ounces neufchatel cheese (optional)
- chipotle rub seasoning (Chipotle Lime Rub (Wildtree Chipotle Lime Rub)
- Pour ingredients into slow cooker. Pour broth over.
- The last hour stir in the cream cheese and finish cooking. Place block of cream cheese in center of mixture and cook on low for 6 hours.
- Remove chicken breasts, shred and return to chili.
