Pumpkin Spice Muffins
- 1 c. fresh or canned pumpkin
- 2/3 c. raisins
- 1/2 c. hot water
- 2 eggs
- 1 c. sugar
- 1/2 tsp. salt
- 1/2 tsp. cinnamon
- 1/2 tsp. ginger
- 1/2 tsp. nutmeg
- 1/4 tsp. cloves
- 2 c. flour
- 1 Tbsp. baking powder
- 1 tsp. baking soda
- 1/2 c. vegetable oil
- Grease muffin tin for 12 muffins.
- Soak raisins in hot water for 15 minutes.
- In a large bowl, beat eggs with sugar, salt and spices.
- Gradually beat in pumpkin.
- Sift flour with baking powder and soda; gradually add to batter.
- Beat in the oil and raisins with liquid.
- Preheat oven to 400u0b0.
- Ladle batter into tins, filling 2/3 full.
- Bake muffins for 20 to 30 minutes or until puffed and firm when tested.
- Serve warm with butter.
