Broccoli Onion Casserole
- 2 (10 oz.) frozen cut broccoli
- 3 medium fresh onions, cut in wedges
- 4 Tbsp. butter
- 2 Tbsp. flour
- 1/4 tsp. salt
- 1 c. milk
- 1 (3 oz.) pkg. cream cheese, cut up
- 1/2 c. shredded American cheese
- 1 c. soft bread crumbs
- Cook and drain broccoli; set aside.
- Cook onion in boiling salted water 10 minutes or until tender.
- Set aside to drain. Melt 2 tablespoons butter; add flour, salt and pepper.
- Add milk. Cook and stir until thick and bubbly.
- Continue stirring and cook 2 more minutes.
- Add cream cheese and stir until melted.
- Stir in broccoli and onion.
- When combined, turn into a 1 1/2-quart casserole.
- Top with American cheese.
- Melt 2 tablespoons butter and toss with bread crumbs and sprinkle over casserole.
- Bake in a 350u0b0 oven for 35 to 40 minutes.
- Makes 8 servings.
