Applesauce Fruitcake
- 1 1/2 c. sugar (white)
- 1 c. shortening
- 2 eggs
- 3 1/4 c. flour
- 1 1/2 tsp. baking soda
- 2 tsp. cinnamon
- 1 tsp. allspice
- 1 tsp. cloves
- 1/2 tsp. salt
- 1 1/2 c. chopped nuts
- 1 1/2 c. raisins
- 1 1/2 c. coarsely chopped dates
- 1/2 c. coarsely chopped red maraschino cherries
- 2 c. applesauce
- 6 red maraschino cherries, halved
- 6 pecans, halved
- Heat oven to 325u0b0.
- Grease 10-inch tube pan.
- Line bottom with wax paper and grease again.
- In large bowl, beat sugar and shortening until light and fluffy.
- Add eggs; blend well.
- Reserve 1/2 cup flour.
- Add remaining 2 3/4 cups flour, soda and spices to egg mixture.
- Blend on low speed until moistened.
- Beat 2 minutes on medium speed.
- Combine reserved flour, nuts, raisins and dates until lightly coated.
- By hand, stir fruit and nut mixture and applesauce into batter.
- Mix well.
- Pour batter into greased and lined tube pan.
- Top with cherry and pecan halves.
- Bake at 325u0b0 for 1 1/4 to 1 3/4 hours or until toothpick inserted in center comes out clean.
- Cool in pan upright 5 minutes.
- Remove from pan and remove wax paper.
- Turn upright and cool completely on wire rack.
- Wrap in foil or plastic to keep moist.
- Store in refrigerator.
- Serves 20.
