Saucy Turnips
- 2 lb. fresh turnip greens with roots
- 3 slices bacon
- 2 Tbsp. vinegar
- 3/4 tsp. sugar
- 3 c. water
- 1/2 tsp. salt
- 1/2 c. chopped onions
- 1 Tbsp. all-purpose flour
- Wash turnip greens and roots; cut in half.
- Combine greens, roots, water and salt in a large Dutch oven; bring to a boil. Reduce heat; cover and simmer 1 hour or until greens and roots are tender.
- Drain greens, reserving 1 cup liquid.
- Set aside.
- Cook bacon in a skillet until crisp; remove bacon, reserving drippings in skillet.
- Crumble bacon and set aside.
- Saute onions in drippings.
- Add to greens.
- Dissolve flour and sugar in vinegar; stir in the reserved cooking liquid.
- Add mixture to greens, stirring constantly, until thickened.
- Stir in the bacon.
- Yields 6 servings.
