Saucy Turnips

  1. Wash turnip greens and roots; cut in half.
  2. Combine greens, roots, water and salt in a large Dutch oven; bring to a boil. Reduce heat; cover and simmer 1 hour or until greens and roots are tender.
  3. Drain greens, reserving 1 cup liquid.
  4. Set aside.
  5. Cook bacon in a skillet until crisp; remove bacon, reserving drippings in skillet.
  6. Crumble bacon and set aside.
  7. Saute onions in drippings.
  8. Add to greens.
  9. Dissolve flour and sugar in vinegar; stir in the reserved cooking liquid.
  10. Add mixture to greens, stirring constantly, until thickened.
  11. Stir in the bacon.
  12. Yields 6 servings.
