Swedish Fruit Soup
- 3/4 c. dried apricots
- 3/4 c. dried prunes
- 1/2 c. raisins (golden preferred)
- 6 c. cold water
- 1 stick cinnamon
- 2 lemon slices, 1/4-inch thick
- 3 Tbsp. tapioca
- 1/2 c. sugar
- 2 oranges, peeled and diced (a smidgen of zest is nice)
- 1 apple, peeled and diced
- 1 pear, peeled and diced
- a slug of brandy or rum or a liqueur to taste (optional)
- Soak dried apricots, prunes and raisins in cold water for 30 minutes. Add cinnamon stick, lemon slices, tapioca and sugar. Bring to a boil. Cover and simmer 10 minutes, stirring occasionally. Stir in orange, apple and pear cubes. Simmer until apple pieces are tender, about 5 minutes. Stir in the booze.
- Pour into large serving bowl and cool to room temperature. Remove cinnamon stick. Cover and chill until serving.
- Makes about 6 servings.
- Choice of fruits can depend on preference and availability.
