Zucchini Flaxseed Muffins

  1. Preheat oven to 350.
  2. Grease 12 cup muffin pan.
  3. Whisk together flour, flaxseed,baking powder,cinnamon,baking soda and nutmeg.
  4. In another bowl combine eggs, zucchini, cranberries, sugar,oil,lemon juice and zest.
  5. Pour egg mixture over oil and stir just until combined.
  6. Spoon into muffin pan.
  7. Bake for about 20 minutes or until done.
