Seafood Casserole
- 1 lb. shrimp, cooked
- 8 oz. oysters in juice, cooked
- 1 lb. scallops, cooked
- 1 lb. crabmeat
- 1/4 c. butter
- 1/4 c. flour
- 1 1/2 c. milk
- 1/2 tsp. salt
- 1/4 tsp. dill weed
- 1/8 tsp. pepper
- 1/8 tsp. dry mustard
- pinch of thyme
- 2 c. cheese, grated
- 2 egg yolks
- juice of 1 lemon
- 1 lb. mushrooms
- Make sauce with butter, flour and milk. Add spices, cheese and salt. Be sure that the cheese melts. Add slightly beaten egg yolks. Cook for 5 minutes over low heat. Mix seafood with sauce. Saute mushrooms and add to seafood and sauce. Add lemon juice. Pour into a large casserole dish. Garnish with additional cheese. Bake at 450u0b0 for 15 minutes. Serves 12.
