Mushrooms Stuffed With Crabmeat

  1. Dice bell peppers, onions, parsley and 1 pound mushrooms. Saute vegetables in 1/2 of butter until transparent.
  2. In a separate pan, saute mushrooms with other 1/2 of butter until almost done.
  3. Add to vegetables.
  4. Add cream.
  5. Cook approximately 5 minutes.
  6. Add crabmeat, bread crumbs and cheese until firm.
  7. (Add more bread crumbs slowly if necessary.)
  8. Salt and pepper to taste. Using mushrooms with stems, cut a tiny piece of top off mushrooms to let stand.
  9. Cut a small piece of stem off.
  10. Wipe mushrooms (do not wash).
  11. Let stuffing cool for 10 to 15 minutes.
  12. Form stuffing into small ball and stuff on stem of mushroom.
  13. Place in baking dish.
  14. Cook 10 to 15 minutes until warm.
