Mushrooms Stuffed With Crabmeat
- 1 lb. crabmeat (fresh)
- 1 red bell pepper
- 1 green bell pepper
- 1 bunch green onions
- 1/2 bunch parsley
- 1 lb. mushrooms
- 1/2 qt. cream
- 1 c. bread crumbs
- 1 stick butter
- 1 doz. large mushrooms
- 1 c. Swiss and Parmesan cheese, grated
- Dice bell peppers, onions, parsley and 1 pound mushrooms. Saute vegetables in 1/2 of butter until transparent.
- In a separate pan, saute mushrooms with other 1/2 of butter until almost done.
- Add to vegetables.
- Add cream.
- Cook approximately 5 minutes.
- Add crabmeat, bread crumbs and cheese until firm.
- (Add more bread crumbs slowly if necessary.)
- Salt and pepper to taste. Using mushrooms with stems, cut a tiny piece of top off mushrooms to let stand.
- Cut a small piece of stem off.
- Wipe mushrooms (do not wash).
- Let stuffing cool for 10 to 15 minutes.
- Form stuffing into small ball and stuff on stem of mushroom.
- Place in baking dish.
- Cook 10 to 15 minutes until warm.
