Minestrone Soup
- 1/2 lb. Italian sausage, cut up
- 1 Tbsp. olive oil
- 1 c. diced onion
- 1 garlic or garlic salt
- 1 tsp. basil
- 2 small zucchini, sliced (not peeled)
- 2 carrots, sliced
- 1 lb. can Italian tomatoes (undrained)
- 2 (10 oz.) cans beef bouillon
- 2 c. finely chopped cabbage
- salt and pepper
- 1 lb. can white kidney beans (undrained)
- 1/2 c. rice
- 1/2 c. red wine
- grated Parmesan cheese and chopped parsley
- In large pot on stove, slice sausage in olive oil.
- Add onion, garlic, carrots and basil.
- Cook 5 minutes.
- Add zucchini, tomatoes, bouillon and cabbage and bring to a boil.
- Reduce heat and simmer for one hour.
- Add beans, rice and wine.
- Cook on low for 20 minutes.
