Eggplant Parmesan
- 1 can tomato sauce
- 1/2 c. grated Romano cheese
- 1 (8 oz.) pkg. grated Mozzarella
- 1 egg
- 1 eggplant
- olive oil
- Italian bread crumbs
- ground meat, browned and mixed with tomato sauce
- dash of basil
- dash of oregano
- mushrooms (optional)
- onion to taste
- garlic to taste
- Peel and slice eggplant very thin.
- Dip in egg and Italian bread crumbs.
- Fry in olive oil and drain.
- Make a sauce with tomato sauce, Romano cheese, salt and pepper, basil, oregano, onion, garlic, Parmesan cheese and mushrooms.
- In casserole dish, alternate sauce, eggplant, and Mozzarella cheese (like a lasagna). Bake at 350u0b0 for approximately 25 to 30 minutes.
