Chocolate Cherry Fruitcake(With Chocolate Glaze)
- 2 1/4 c. flour
- 1 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1 c. chopped red glace cherries
- 1/2 c. butter, room temperature
- 1 1/2 c. sugar
- 4 eggs
- 1 tsp. vanilla extract
- 4 oz. semi-sweet chocolate, melted and cooled
- 3/4 c. milk
- 3/4 c. miniature semi-sweet chocolate chips
- Preheat oven to 350u0b0.
- Grease and flour one 10-inch fluted tube pan.
- Stir together the flour, baking powder and salt.
- Add the chopped red cherries and mix well with your hands, separating the bits of cherries.
- Set aside.
- In a large bowl, cream butter and sugar.
- Add eggs, one at a time, beating well after each addition.
- Add vanilla and blend.
- Stir in melted chocolate.
- Add dry ingredients and milk alternately, in 3 parts each, blending well.
- Stir in chocolate chips.
- Pour into prepared tube pan. Bake 60 to 70 minutes.
- Cool 10 minutes; then turn out onto rack.
