Earthy Grilled Pork Chop Rub

  1. Heat a small skilled to medium-high. Add allspice, cumin, coriander, and peppercorns. Stir frequently and toast until seeds begin to pop and smoke a bit.
  2. Add toasted spices, bay leaves, and thyme to spice grinder and grind into a fine powder.
  3. Mix 1 tablespoon (or more, to taste) of ground spice mixture with remaining dry ingredients.
  4. Rub healthy amount of rub onto meat and let rest in refrigerator for at least one hour, preferably more. Grill as desired.
