Orange Sesame Muffins
- 2/3 c. all-purpose flour
- 1 c. whole wheat flour
- 1 1/4 tsp. baking powder
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1/3 c. rolled oats
- 1/3 c. honey
- 1 large egg
- 2 Tbsp. canola oil
- 1 Tbsp. dark sesame oil
- 1 c. low-fat buttermilk
- 2 Tbsp. grated orange peel
- 1 tsp. orange extract (optional)
- 1 tsp. toasted sesame seed
- Lightly coat 12 muffin tin cups with nonstick cooking spray. Set aside.
- Sift together flours, baking powder, baking soda and salt in a large bowl.
- Stir in oats.
- In a separate bowl, whisk together honey, egg, canola oil, sesame oil, buttermilk, orange peel, orange extract and sesame seed.
- Mix together contents of the 2 bowls, stirring until just combined.
- Fill muffin cups 2/3 full.
- Bake at 400u0b0 for 12 to 15 minutes.
- Makes 12.
