Fresh Apple Cake
- 1 1/3 c. vegetable oil
- 2 c. sugar
- 2 large eggs
- 2 1/2 c. all-purpose flour
- 1 tsp. salt
- 1 tsp. soda
- 2 tsp. baking powder
- 1 tsp. vanilla extract
- 3 c. raw, chopped apples (I use yellow Delicious, best if slightly mellow)
- 1 c. chopped pecans
- 1 c. brown sugar
- 1 stick oleo
- 1/4 c. sweet milk
- Prepare apples.
- Cover and set aside.
- Measure oil and pour into large mixing bowl.
- Add sugar and eggs; mix well.
- Sift together dry ingredients and add to creamed mixture in small amounts, beating after each addition.
- When batter becomes stiff, finish mixing by hand.
- Fold in nuts and apples.
- Spread evenly in greased and floured 9 x 13-inch pan or Bundt pan, if preferred. Bake about 1 hour at 350u0b0.
- Remove from oven and set aside.
