Pork And Peanut Stir-Fry(Our Favorite Stir-Fry)

  1. Slice pork into thin narrow strips.
  2. Combine 2 teaspoons each cornstarch and soy sauce, ginger and pork; let stand 15 minutes. Meanwhile, combine remaining 2 teaspoons cornstarch, 2 tablespoons plus 1 teaspoon soy sauce, vinegar, garlic powder and 1/2 cup water; set aside.
  3. Heat 1 tablespoon oil in hot wok (or a large skillet).
  4. Add pork and stir-fry 2 minutes; remove.
  5. Heat remaining 1 tablespoon oil in same pan.
  6. Add onion and carrot; stir-fry 2 minutes.
  7. Add zucchini; stir-fry 2 minutes.
  8. Add pork and soy sauce mixture.
  9. Cook, stirring, until sauce boils and thickens.
  10. Stir in peanuts.
  11. Good served over rice.
  12. Serves 2 to 3.
