Dirty Rice
- 2 Tbsp. flour
- 2 Tbsp. vegetable oil
- 1 c. chopped onion
- 1 c. chopped celery
- 1/2 c. green peppers, chopped
- 2 cloves garlic, minced
- 1/2 lb. lean ground beef
- 1/2 lb. ground pork
- 1/2 lb. chicken giblets, chopped
- 2 tsp. salt
- 1/4 tsp. black pepper
- 1 c. chicken broth or water
- 3 c. hot, cooked rice
- 1 c. sliced green onion tops
- Brown flour in oil until it is a deep red-brown, stirring constantly to prevent burning.
- Add onion, celery, green peppers and garlic.
- Cook until vegetables are tender.
- Stir in beef, pork, giblets and seasonings.
- Continue cooking until meat loses its red color.
- Blend in broth, cover and simmer 25 minutes.
- Stir in rice and onion tops.
- Cook 5 minutes longer.
- Mixture should be slightly moist.
- Serves 6.
