Cheddar 'N Turkey Potato Pie

  1. Cook and stir mushrooms and onion in margarine over medium-high heat for 3 minutes.
  2. Stir in flour, tarragon and pepper.
  3. Gradually stir in broth and milk; cook, stirring frequently until mixture thickens and comes to a boil, about 5 minutes.
  4. Reduce heat to low; stir in turkey, mixed vegetables and 1 cup of cheese.
  5. Simmer for 5 minutes.
  6. Stir 3/4 cup of cheese into hot mashed potatoes.
  7. Spoon turkey mixture into 1 1/2-quart casserole.
  8. Top with potato mixture.
  9. Place under heated broiler for 5 minutes.
  10. Sprinkle with remaining cheese and paprika.
  11. Place under broiler for 2 minutes.
  12. Makes 6 servings.
