Green Tomato Casserole
- 8 medium green tomatoes
- 3 large Vidalia onions
- 1 stick butter
- 1 tsp. curry powder
- 1/2 tsp. salt
- dash of black pepper
- dash of cayenne pepper
- 1 1/2 c. sour cream
- 1/3 c. grated Parmesan cheese
- 1 can water chestnuts
- 1 Tbsp. diced pimientos
- 1/2 c. bread crumbs
- Slice tomatoes and onions.
- Cook in large skillet with butter until mushy.
- Stir in curry powder, salt, peppers and water chestnuts, sliced.
- Let mixture cool, then stir in sour cream and pimientos.
- Pour into shallow casserole and top with a mixture of bread crumbs and cheese.
- Bake about 30 minutes in 350u0b0 oven or until bubbly and crumbs are brown.
- Serves 8.
