Shepherd'S Pie
- 2 Tbsp. margarine
- 2 medium onions, chopped
- 1 lb. lean ground beef
- 1 (10 oz.) pkg. frozen peas and carrots
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/4 tsp. thyme
- 2 Tbsp. flour
- 1 c. beef broth (canned is fine)
- 1 Tbsp. Worcestershire
- 3 c. instant mashed potatoes, prepared according to pkg.
- 1/4 c. sour cream (optional)
- Preheat broiler.
- In large skillet, melt margarine.
- Add onions and saute until translucent.
- Add beef and cook until browned, breaking up meat with spoon.
- Add vegetables and seasoning and cook, stirring, about 3 minutes.
- Sprinkle flour over beef; cook 1 minute.
- Add broth and Worcestershire; simmer 5 minutes.
- Stir sour cream into potatoes.
- Pour beef mixture into a 9 1/2-inch deep dish pie plate.
- Top with potatoes.
- Broil 5 to 10 minutes.
- Makes 6 servings.
