Sweet And Sour Potato Salad
- 8 potatoes
- 1/2 c. chopped ripe olives
- 1 stalk celery, chopped
- 2 hard-cooked eggs, sliced
- 1 onion, minced
- 3 sweet-sour pickles, chopped
- 1 Tbsp. minced parsley
- 4 slices bacon, chopped
- 2 eggs, well beaten
- 1 c. sugar
- 1 tsp. prepared mustard
- 1/2 tsp. salt
- 1/4 tsp. cracked pepper
- 1/2 c. vinegar, diluted with 1/2 c. cold water
- Boil potatoes in their jackets.
- When tender, peel and slice. Add olives, celery, hard-cooked eggs, onion, pickle and parsley. Fry bacon until crisp and brown.
- Beat eggs; add sugar, spices and diluted vinegar.
- Mix well.
- Pour egg mixture into hot bacon fat; cook, stirring constantly, until thickened.
- Pour over potato mixture and mix lightly.
- Serve hot.
- Makes 6 servings.
