Chicken With Parsley Sauce And Broccoli With Lemon Butter
- 1 broiler-fryer (2 1/2 lb.), cut up
- salt and pepper to taste
- 1/4 c. butter or margarine
- 1/4 c. fresh bread crumbs (1/2 slice bread)
- 2 Tbsp. minced shallots
- 2 small cloves garlic, minced
- 2 Tbsp. minced parsley
- Season chicken with salt and pepper.
- Melt butter in broiler-proof baking dish large enough to hold chicken in single layer.
- Turn chicken in butter to coat.
- Arrange skin side down in baking dish; broil in preheated broiler about 6 inches from heat source for 5 minutes.
- Remove from broiler and turn skin side up. Return to broiler about 5 minutes.
- Mix remaining ingredients. Sprinkle evenly over chicken; baste well with butter.
- Bake in 400u0b0 oven for 10 minutes or until tender.
- Just before serving, reheat broiler.
- Place chicken briefly under broiler to brown. Makes 4 servings.
