Yummiest Cookies Ever
- 2 1/4 cups all-purpose flour
- 1/8 cup ground flax seeds
- 1 teaspoon ground cinnamon
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup unsalted butter, softened
- 1 (3 1/4 ounce) box vanilla instant pudding mix
- 1/4 cup sugar
- 3/4 cup brown sugar
- 2 eggs
- 1 teaspoon vanilla
- 1/2 cup butterscotch chips
- 1/2 cup miniature semisweet chocolate chips
- 3/4 cup walnuts
- Mix together flour, soda, salt and cinnamon in a large bowl and set aside.
- Cream butter, sugar and pudding mix.
- Beat in eggs until light and slightly fluffy.
- Mix in vanilla.
- Mix in dry ingredients a little at a time.
- Place walnuts in large zip top bag. Pound with a mallet until almost pulverized.
- Mix walnuts, butterscotch chips and mini chocolate chips into dough.
- Roll dough in to 1 inch balls and place on baking sheet 1 inch apart.
- Bake at 375 for 8-10 minutes in a conventional oven. If using a convection oven bake at 350 for 8 minutes.
- Remove to wire racks to cool.
