Spinach Lasagna
- 1/2 lb. lasagna noodles
- 2 (10 oz.) pkg. frozen chopped spinach
- 1 (24 to 30 oz.) container small curd cottage cheese
- 1/2 Tbsp. parsley
- 1 tsp. oregano
- 1 tsp. basil
- 1/2 tsp. pepper
- 1 (12 oz.) pkg. shredded Mozzarella cheese
- 1/4 to 1/2 c. Parmesan cheese
- 1 jar spaghetti sauce
- Cook lasagna noodles according to package directions.
- Mix together all remaining ingredients, except Parmesan cheese and spaghetti sauce and Mozzarella cheese.
- Using 9 x 11-inch baking dish, pour a small amount of spaghetti sauce on bottom.
- Layer with 1/2 lasagna noodles.
- Next layer with 1/2 spinach mix.
- Next layer with 1/2 package Mozzarella cheese.
- Repeat.
- End with sauce; sprinkle with Parmesan cheese.
- Bake at 350u0b0 covered for 45 minutes.
- Uncover and continue baking for 15 minutes.
