Zucchini Fruit Bread

  1. Cream sugar, oil, egg and vanilla; mix well.
  2. Grate zucchini. Combine with orange juice and peel; set aside.
  3. Combine all dry ingredients and blend with creamed mixture.
  4. Fold in zucchini mixture, nuts, dates and raisins.
  5. Pour into Bundt pan that has been well-greased and floured.
  6. Bake in preheated 325u0b0 oven for 1 hour and 15 minutes or until toothpick inserted near center comes out clean.
  7. Wrap in foil, when cool, to keep moist.
  8. This freezes well.
