Zucchini Fruit Bread
- 2 c. shredded zucchini
- 1 Tbsp. orange juice
- 3/4 c. sugar
- 1/2 c. oil
- 1 egg
- 1 tsp. vanilla
- 1 1/2 tsp. cinnamon
- 1 tsp. baking powder
- 1/4 tsp. soda
- 1/4 tsp. ginger
- 1/4 tsp. cloves
- 2 c. flour
- 1/2 c. walnuts, chopped
- 1/2 c. dates, chopped
- 1/2 c. raisins
- peel of 1 orange, grated
- Cream sugar, oil, egg and vanilla; mix well.
- Grate zucchini. Combine with orange juice and peel; set aside.
- Combine all dry ingredients and blend with creamed mixture.
- Fold in zucchini mixture, nuts, dates and raisins.
- Pour into Bundt pan that has been well-greased and floured.
- Bake in preheated 325u0b0 oven for 1 hour and 15 minutes or until toothpick inserted near center comes out clean.
- Wrap in foil, when cool, to keep moist.
- This freezes well.
