Almond Cookies
- 1 c. butter
- 1/2 c. sugar
- 1 1/2 c. flour
- 1/4 c. cornstarch
- 1/2 tsp. baking powder
- 1 tsp. cinnamon
- 1 tsp. cardamon (ground)
- 1/2 c. chopped almonds
- 1 egg yolk
- 2 tsp. water
- halved blanched almonds for decoration
- Cream butter and sugar.
- Sift together the flour, cornstarch, baking powder and spices.
- Blend into butter mixture.
- Stir in chopped nuts.
- Chill dough at least 2 hours.
- Shape dough into rounds the size of melon balls.
- Place on greased baking sheet; flatten slightly.
- Combine egg yolk and water; brush onto cookies. Top each cookie with a nutmeat, pressing into cookie.
- Bake at 375u0b0 for 10 minutes until golden brown.
- Yield:
- 3 dozen cookies.
