Carrot Bran Muffins

  1. Preheat oven to 400u0b0.
  2. Grease 12 muffin cups.
  3. In large bowl, combine carrots, bran, honey, milk, oil, lemon juice, egg, dates or raisins and nuts, if desired.
  4. Let mixture stand for 5 minutes. In a medium bowl mix together flour, sugar, baking soda, pumpkin pie spice and salt.
  5. Combine dry ingredients into wet ingredients and stir just until moistened.
  6. Bake for 15 to 20 minutes.
