Carrot Bran Muffins
- 2 to 3 c. shredded carrots
- 1 c. unprocessed bran
- 1/2 c. honey
- 3/4 c. skim milk
- 2 Tbsp. olive oil
- 2 Tbsp. lemon juice
- 1 egg
- 8 oz. dates, chopped or 1 c. raisins
- 1/2 c. nuts (optional)
- 1 c. flour
- 2 tsp. brown sugar
- 1 tsp. baking soda
- 1/2 tsp. pumpkin pie spice
- 1/4 tsp. salt
- Preheat oven to 400u0b0.
- Grease 12 muffin cups.
- In large bowl, combine carrots, bran, honey, milk, oil, lemon juice, egg, dates or raisins and nuts, if desired.
- Let mixture stand for 5 minutes. In a medium bowl mix together flour, sugar, baking soda, pumpkin pie spice and salt.
- Combine dry ingredients into wet ingredients and stir just until moistened.
- Bake for 15 to 20 minutes.
