Grandma'S Potato Salad

  1. In the top of a double boiler over boiling water, heat water, butter and vinegar.
  2. In a bowl, beat eggs.
  3. Add sugar and cornstarch.
  4. Add to butter mixture; cook and stir constantly until thick, about 5 to 7 minutes.
  5. Remove from the heat; allow to cool. Stir in the salad dressing.
  6. Fold in the whipped cream.
  7. In a large bowl, toss potatoes, onions, salt and pepper.
  8. Pour the dressing over and mix gently.
  9. Chill.
  10. Serve in a lettuce lined bowl, if desired.
  11. Garnish with the hard-cooked eggs; sprinkle with paprika.
  12. Yields 18 servings.
