Quick Chili Soup
- 1/3 lb pork sausage (more if desired, Vegetarians may omit the sausage and add another can of beans) (optional)
- 1 large yellow onion, diced
- 1 large green bell pepper, diced
- 1 (15 ounce) can chili beans
- 1 (15 ounce) can diced tomatoes
- 2 (8 ounce) cans tomato sauce
- 2 2/3 - 3 1/2 cups water
- 1 tablespoon garlic powder
- 1 1/2 teaspoons salt
- 2 teaspoons cumin
- 1 tablespoon chili powder
- 1 teaspoon sugar
- Brown and"crumble" sausage.
- Add diced onion& pepper.
- Saute until onions are almost clear.
- Add tomatoes, beans, tomato sauce, seasonings and water.
- Bring to a boil, then reduce heat to simmer.
- Cover and simmer for about 20 minutes.
- Total preparation time is about 30 minutes, because of dicing the vegetables and browning meat.
- Makes about 2 quarts.
- Will feed 4 easily with seconds.
- Cornbread goes well with this soup.
