Quick Chili Soup

  1. Brown and"crumble" sausage.
  2. Add diced onion& pepper.
  3. Saute until onions are almost clear.
  4. Add tomatoes, beans, tomato sauce, seasonings and water.
  5. Bring to a boil, then reduce heat to simmer.
  6. Cover and simmer for about 20 minutes.
  7. Total preparation time is about 30 minutes, because of dicing the vegetables and browning meat.
  8. Makes about 2 quarts.
  9. Will feed 4 easily with seconds.
  10. Cornbread goes well with this soup.
