Microwave Peanut Brittle

  1. Use a microwavable glass bowl.
  2. Stir together peanuts, sugar, syrup and salt. Cook in microwave on High 7 to 8 minutes, stirring well after 4 minutes.
  3. Add butter and vanilla to syrup, blending well.
  4. Return to microwave and cook 1 minute more. The peanuts will be lightly brown and the syrup very hot.
  5. Add baking soda and stir gently until light and foamy. Pour and spread mixture quickly onto a lightly greased flexible cooking sheet. Let cool for 1/2 hour. When cool, break into small pieces and store in an airtight container. You can use 1 cup pecans or 1 cup sesame seeds instead of the peanuts.
