Microwave Peanut Brittle
- 1 c. raw peanuts
- 1/2 c. white corn syrup
- 1 tsp. butter or oleo
- 1 tsp. baking soda
- 1 c. granulated sugar
- 1/8 tsp. salt
- 1 tsp. vanilla extract
- Use a microwavable glass bowl.
- Stir together peanuts, sugar, syrup and salt. Cook in microwave on High 7 to 8 minutes, stirring well after 4 minutes.
- Add butter and vanilla to syrup, blending well.
- Return to microwave and cook 1 minute more. The peanuts will be lightly brown and the syrup very hot.
- Add baking soda and stir gently until light and foamy. Pour and spread mixture quickly onto a lightly greased flexible cooking sheet. Let cool for 1/2 hour. When cool, break into small pieces and store in an airtight container. You can use 1 cup pecans or 1 cup sesame seeds instead of the peanuts.
