Creamed Sweet Potatoes With Marshmallows

• 6 large yellow sweet potatoes
• 1/4 lb. butter
• 1 1/4 c. sugar
• 2 Tbsp. orange flavoring
• 1 c. whole milk
• 3 eggs, well beaten
• heavy dash of ground ginger
• dash of black pepper
• pinch of salt
• 1 c. chopped pecans
• 1 c. raisins
• 2 tsp. orange flavoring
• 1 c. whole milk
• 3 eggs, well beaten
• heavy dash of ground ginger
• dash of black pepper
• pinch of salt
• 1 c. chopped pecans
• 1 c. raisins

1. Place in a casserole dish and cook until it sets.
2. Cover with marshmallows and brown lightly.
3. Add crystallized red cherries between marshmallows.
