Squash Hermits (Protein Bars)
- 1/4 cup soy flour
- 1 1/2 cups whole wheat flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground allspice
- 1 pinch nutmeg
- 6 tablespoons margarine, room temperature
- 1 cup winter squash, pureed
- 3/4 cup molasses
- 1/2 cup chopped walnuts
- 1/2 cup sunflower seeds
- 1 cup dried currants or 1 cup raisins
- Preheat oven to 350u0b0.
- In separate bowls, combine dry ingredients and wet ingredients. Mix together.
- Stir in chopped nuts and fruits.
- Spray or grease parchment paper and place on a baking sheet or bar pan; spread mixture evenly onto paper.
- Bake at 350u0b0 for 30 minutes, or until golden.
- Let cool; cut into squares.
