Ham 'N Broccoli Soup
- 1/4 c. chopped onion
- 2 Tbsp. diet margarine
- 1/4 c. plain flour
- 2 pkg. low-sodium chicken bouillon
- 1 tsp. dry mustard
- 1/2 tsp. thyme
- 1/8 tsp. black pepper
- 2 c. skim milk
- 2 c. water
- 2 c. fresh broccoli flowerets or frozen cut broccoli
- 4 oz. Healthy Choice lean ham, chopped
- In large saucepan cook onion in diet margarine until tender. Stir in flour, chicken bouillon, mustard, thyme and pepper.
- Add milk and water all at once.
- Cook and stir over medium heat until thickened.
- Stir broccoli and ham into soup.
- Bring to boil, then reduce heat and simmer for 6 to 8 minutes, until broccoli is tender.
- Serves 2 (313 calories, 25 g protein, 9.8 g fat, 5 mg cholesterol and 591 mg sodium).
