Boston Baked Beans
- 1 lb. pkg. navy or pea beans
- 1/4 lb. salt pork, cut in 2 inch pieces
- 1 small onion, peeled
- 1 tsp. dry mustard
- 6 c. water
- 1/2 tsp. baking soda
- 1/3 c. molasses
- 3 Tbsp. sugar
- 1 tsp. salt
- 1/4 tsp. pepper
- Soak beans overnight in a large pot with 6 cups water.
- Add the baking soda and bring to a boil.
- Allow to simmer 10 minutes; drain and reserve liquid.
- Place the beans, salt pork and onions in a bean pot or casserole.
- Add molasses, sugar, dry mustard, salt, pepper and a cup of the bean liquid.
- Stir thoroughly and add enough liquid to cover the beans.
- Cover with lid.
- Bake 2 hours at 300u0b0.
- Add the remaining liquid and stir.
- Bake an additional 1 1/2 hours or until the beans are tender.
- Uncover for last 1/2 hour of cooking.
- Total cooking time is 3 1/2 hours at 300u0b0.
- Serves 8.
