Boston Baked Beans

  1. Soak beans overnight in a large pot with 6 cups water.
  2. Add the baking soda and bring to a boil.
  3. Allow to simmer 10 minutes; drain and reserve liquid.
  4. Place the beans, salt pork and onions in a bean pot or casserole.
  5. Add molasses, sugar, dry mustard, salt, pepper and a cup of the bean liquid.
  6. Stir thoroughly and add enough liquid to cover the beans.
  7. Cover with lid.
  8. Bake 2 hours at 300u0b0.
  9. Add the remaining liquid and stir.
  10. Bake an additional 1 1/2 hours or until the beans are tender.
  11. Uncover for last 1/2 hour of cooking.
  12. Total cooking time is 3 1/2 hours at 300u0b0.
  13. Serves 8.
