Sunshine Raisin Casserole
- 4 oz. butter or margarine
- 1 c. chopped onions
- 1 c. diced carrots
- 1 c. cut string beans
- 2 Tbsp. caraway seed
- 1 c. diced red pepper
- 1 c. diced green pepper
- 1 c. zucchini
- 1 c. sliced mushrooms
- 2 c. cooked brown rice
- 1/2 c. raisins
- 1/2 c. walnuts, chopped fine
- 1 Tbsp. dried dill weed
- 1/4 c. tamari or soy sauce
- 1 c. grated Cheddar cheese
- salt and pepper to taste
- In a large skillet, melt margarine and saute onions, carrots, string beans and caraway seed for 5 minutes.
- Add peppers and cook 3 more minutes.
- Add zucchini and cook for 3 more minutes, stirring constantly.
- Add mushrooms and cook an additional 5 minutes, covered.
- (Drain off any liquid.)
- Add cooked rice, raisins, chopped walnuts, dillweed and tamari, salt and pepper.
- Place mixture in a buttered casserole and top with grated Cheddar cheese. Bake at 375u0b0 for 15 minutes or until casserole is heated through and cheese is melted.
- Makes 6 servings.
