Bill Edwardsen'S Famous Corn Chowder

  1. In a large pan, saute bacon until crisp.
  2. Set aside.
  3. Drain all but 3 tablespoons of drippings.
  4. Lightly saute onions and garlic. Add stock, potatoes and carrots. Cover and bring to a boil over high heat.
  5. Reduce heat. Simmer until vegetables are al dente, about 15 minutes.
  6. Remove cover.
