Pasta Primavera With Three Cheeses
- 6 oz. spaghetti or linguini
- 2 c. chopped red or green peppers
- 2 c. sliced zucchini or squash
- 2 c. sliced mushrooms
- 1 tsp. butter or margarine
- 1 c. part skim milk Ricotta cheese
- 1/4 c. milk
- 1/2 c. shredded skim milk Mozzarella cheese
- 2 Tbsp. grated Parmesan cheese
- 1 1/4 tsp. Italian seasoning
- 1/2 tsp. salt
- 1/4 tsp. ground pepper
- Cook spaghetti according to directions.
- In a 12-inch skillet, cook peppers, squash and mushrooms in margarine for 3 to 4 minutes until almost tender.
- Drain pasta.
- Toss with vegetables in skillet.
- Transfer to heated platter, cover to keep warm.
- In medium saucepan, combine Ricotta, Mozzarella, milk, Parmesan, Italian seasoning, salt and pepper.
- Cook over medium heat until warm (do not boil).
- Spoon over pasta and vegetables.
