Christmas White Fruit Cake
- 1 c. butter
- 2 c. sugar
- 2 c. cake flour
- 4 tsp. baking powder
- 6 egg whites
- 1 c. milk
- 4 tsp. vanilla
- 2 tsp. lemon extract
- 2 lb. blanched raisins
- 1/2 lb. candied citron
- 1 lb. candied cherries (red and green)
- 1/2 lb. blanched almonds
- 2 c. coconut
- Cream butter and sugar to soft fluffy stage; add beaten egg yolks and whip.
- Sift flour and baking powder together three times and add to mixture.
- Alternate with milk.
- Add stiffly beaten egg whites, vanilla and lemon extract.
- Wash raisins; dry thoroughly. Dredge in flour, also fruits.
- Work in fruits.
- Coarsely chop almonds.
- Stir well; work in coconut.
- Bake in slow oven for 2 1/2 hours in paper-lined greased tins.
