Pineapple Chicken
- 8 chicken breasts
- 1/2 c. flour
- 1/3 c. salad oil
- 1 tsp. salt
- 1/4 tsp. pepper
- 1 green pepper, cut crosswise
- 1 chicken bouillon cube
- 1 (20 oz.) can sliced pineapple
- 1 c. sugar
- 2 Tbsp. cornstarch
- 3/4 c. vinegar
- 1 Tbsp. soy sauce
- 1/4 tsp. ginger
- Wash chicken.
- Coat with flour and brown on all sides in hot oil.
- Spray a shallow baking dish with Pam and place chicken in, skin side up.
- Sprinkle with salt and pepper.
- Drain pineapple juice and add water to make 1 1/4 cups liquid.
- In a medium saucepan add remaining ingredients.
- Bring to a boil and cook 2 minutes until thickened.
- Pour over chicken and bake 30 minutes. Add pineapple and green pepper slices; bake 30 minutes longer. May be served over rice.
