Pineapple Chicken

  1. Wash chicken.
  2. Coat with flour and brown on all sides in hot oil.
  3. Spray a shallow baking dish with Pam and place chicken in, skin side up.
  4. Sprinkle with salt and pepper.
  5. Drain pineapple juice and add water to make 1 1/4 cups liquid.
  6. In a medium saucepan add remaining ingredients.
  7. Bring to a boil and cook 2 minutes until thickened.
  8. Pour over chicken and bake 30 minutes. Add pineapple and green pepper slices; bake 30 minutes longer. May be served over rice.
