Skillet Chicken With Vegetables
- 2 whole chicken breasts, skinned and boned
- 1 Tbsp. olive oil
- 1 lb. unpeeled sweet potato, cut into 1-inch slices
- 1 c. apple juice
- 1 tsp. herb and spice seasoning
- 1/2 medium-sized bunch broccoli, cut into 2-inch pieces
- 1 Tbsp. cornstarch
- Cut chicken into bite-sized chunks.
- In 12-inch skillet over medium heat in olive oil, cook chicken until lightly browned on all sides, stirring often.
- Add sweet potatoes, apple juice and seasoning; heat to boiling.
- Reduce heat to low, cover and simmer 15 minutes.
- Add broccoli and continue cooking about 15 minutes longer or until tender.
- Mix cornstarch and 2 tablespoons water until smooth; gradually stir into hot liquid in skillet, stirring constantly, until mixture thickens slightly and boils.
- Makes 4 servings.
