Skillet Chicken With Vegetables

  1. Cut chicken into bite-sized chunks.
  2. In 12-inch skillet over medium heat in olive oil, cook chicken until lightly browned on all sides, stirring often.
  3. Add sweet potatoes, apple juice and seasoning; heat to boiling.
  4. Reduce heat to low, cover and simmer 15 minutes.
  5. Add broccoli and continue cooking about 15 minutes longer or until tender.
  6. Mix cornstarch and 2 tablespoons water until smooth; gradually stir into hot liquid in skillet, stirring constantly, until mixture thickens slightly and boils.
  7. Makes 4 servings.
