Hearty Minestrone

  1. In large
  2. soup
  3. pot
  4. saute onions and garlic in oil and margarine.
  5. Stir
  6. in
  7. carrots, potatoes and celery.
  8. Add green beans, zucchini
  9. and
  10. cabbage.
  11. Cook
  12. until
  13. onions turn soft. Add broth, water
  14. and tomatoes (that you cut up) with juice to pot. Stir
  15. in seasonings.
  16. Simmer uncovered for 2 hours.
  17. Add beans and cook 30 minutes longer.
  18. If small pasta is desired, add to soup at last 20 minutes and cook until tender.
