Hearty Minestrone
- 3 carrots, cut up
- 3 stalks celery, cut up
- 2 medium onions, cut up
- 2 potatoes, cut up
- 1 small zucchini, cut up
- 1/4 c. string beans, cut up
- 1 c. raw cabbage or spinach, cut up
- 2 cloves garlic, cut up
- 1/3 c. olive oil
- 3 Tbsp. margarine
- 4 c. beef broth
- 2 1/2 c. water
- 1 large can white or red beans
- 1 can plum tomatoes (28 oz. size)
- 1/2 tsp. basil
- 1/4 tsp. rosemary
- 1 bay leaf
- salt and pepper to taste
- In large
- soup
- pot
- saute onions and garlic in oil and margarine.
- Stir
- in
- carrots, potatoes and celery.
- Add green beans, zucchini
- and
- cabbage.
- Cook
- until
- onions turn soft. Add broth, water
- and tomatoes (that you cut up) with juice to pot. Stir
- in seasonings.
- Simmer uncovered for 2 hours.
- Add beans and cook 30 minutes longer.
- If small pasta is desired, add to soup at last 20 minutes and cook until tender.
