Sugar-Coated Crispy Butter Cookies

  1. Set oven to 350 degrees F.
  2. Grease a large baking sheet.
  3. In a large mixing bowl cream the butter with confectioners sugar and vanilla.
  4. Beat in the egg whites until combined.
  5. In another bowl combine the flour with baking powder and baking soda; add to the creamed mixture until combined.
  6. Roll into about 1-1/2-inch balls, then coat in the sugar.
  7. Place on baking sheet about 2-inches apart.
  8. Flatten with a fork.
  9. Bake for about 10-12 minutes or until the edges are golden brown.
  10. Remove to wire racks to cool.
