Split Pea Hummus With Coconut Naan Bread
- 200 g split peas, dried, boiled until tender
- 60 ml olive oil
- 1 teaspoon cumin powder
- 1 tablespoon lemon juice
- 2 garlic cloves
- 10 g coriander or 10 g cilantro leaves
- 2 pieces bell peppers, jalapeno
- 1/2 teaspoon salt
- 250 ml coconut milk
- 250 ml water
- 60 ml coconut oil
- 30 g coconut flour
- 120 g flour, cassava
- 1/2 teaspoon salt
- 30 ml ghee
- Combine all ingredients for the hummus in a food processor and pulse until smooth.
- Combine coconut milk, water, cassava flour, coconut flour, coconut oil, and salt in a bowl. Mix into a smooth batter.
- Melt ghee in a non-stick pan over high heat.
- Pour in 1/6 of the batter and cook over medium heat until bubbles appear on the surface. About 2 minutes per side.
- Flip and continue cooking for about another minute.
