Pork Tenderloin With Tomato Sauce

  1. Arrange bacon slices over pork tenderloin.
  2. Place tenderloin on rack in a shallow roasting pan.
  3. Tuck thin end of meat under.
  4. Roast, uncovered, at 350 degrees for about 25 to 35 minutes, or until internal temperature is around 160 degrees.
  5. In a saucepan over medium-low heat, melt butter.
  6. Cook chopped onion in butter until tender; add tomato sauce, sweet pickle, vinegar, parsley flakes and sugar.
  7. Simmer, uncovered, for 10 minutes.
  8. Serve with roasted pork tenderloin.
