Kidney Beans And Sausage
- 1 c. dry red kidney beans
- 4 c. water
- 2 Tbsp. vegetable oil
- 1 medium onion, chopped
- 1 green pepper, chopped
- 1 clove garlic, crushed
- 1 (15 oz.) can tomato sauce
- 1 bay leaf
- 1 Tbsp. chili powder
- 1 tsp. Italian herb seasoning
- 1 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/2 to 1 lb. smoked sausage (to taste), cut in 1/8-inch slices
- parsleyed rice
- Combine beans and water in saucepan and bring to a boil.
- Cook for 2 minutes.
- Remove from heat, cover and let stand for 1 hour. Return beans to heat and simmer for 1 1/4 to 1 1/2 hours or until tender.
- Remove 1/2 cup of beans, mash and set aside.
- Place oil in frying pan and cook onion, green pepper and garlic until limp. Add onion mixture to beans in saucepan along with tomato sauce, seasonings and sausage.
- Cover and simmer for 30 minutes, stirring occasionally.
- Blend in mashed beans and cook until thickened. Remove bay leaf.
- Serve over parsleyed rice.
- Makes 6 to 8 servings.
