Garden Taco Rice
- 1 lb. ground beef or turkey
- 1/2 c. chopped onion
- 1 (1 1/4 oz.) pkg. taco seasoning mix
- 1 1/2 c. water
- 1 1/2 c. thinly sliced zucchini
- 1 c. Green Giant frozen corn niblets (16 oz. pkg.)
- 1 (14 1/2 oz.) can stewed tomatoes
- 1 1/2 c. uncooked instant rice
- 4 oz. (1 c.) shredded Cheddar cheese
- In large skillet, brown ground beef and onion; drain.
- Stir in remaining ingredients except rice and cheese; bring to a boil. Stir in rice.
- Reduce heat to low; cover and simmer 5 to 7 minutes or until liquid is absorbed, stirring occasionally.
- Remove from heat.
- Fluff mixture with fork; sprinkle with cheese.
- Cover; let stand 3 minutes or until cheese is melted.
- Garnish with cilantro and cherry tomatoes, if desired.
